Winemaking
Grapes: 100% Pinot Noir.
Pinot Noir is one of the finest and most elegant varieties on the international wine scene, native to Burgundy (France) and adapts fantastically to Utiel-Requena. To make the Bassus Pinot Noir 2020 wine, the best grapes from low-production strains are selected and the grapes are only harvested in the morning to maintain a good temperature in the grapes until they arrive at the winery, where the boxes are placed in a cold room, keeping the grapes at -10ºC. It is destemmed and vatted in new American oak barrels, into which a water-cooled stainless steel plate is inserted to allow cold maceration at 8ºC. The hat is sunk daily, barrel by barrel, manually and once fermentation has started, the cooling water is turned off so that the barrel itself can reach a maximum temperature of 26ºC. After 12 days, the grapes are removed from the vat in the pneumatic press for light pressing. The resulting final wine is aged for a minimum of 10 months in new fine-grained French oak barrels, and bottled, lightly filtered.
Tasting notes
View: Medium cherry red color with violet reflections.
Nose: High intensity, combining aromas of French oak with ripe fruit such as cherry, cassis, licorice...
Mouth: Full, velvety, very elegant, ripe red fruit and a toffee background that makes it very long and complex in the mouth.
Recommended temperature: 16-18ºC.
Food pairing
Its versatility makes it a great option to accompany a large number of preparations. Don't hesitate to eat it with semi-cured cheeses, oily fish, white meats, even roasted red meats. Accepts mushrooms and sauced cod dishes, and fish in sauce in general.
