Cardenal Mendoza is the first Sherry Brandy aged an average of 15 years, which Sánchez Romate began to make in 1887 for private consumption and, later and thanks to becoming famous for its quality, the winery decided to market it. Combine it with chocolate with more than 60% cocoa if you want to complement the sweetness of the brandy or enhance its toasted nut and oak tones.

PREPARATION
The Cardenal Mendoza brandy is made from a selection of the best holandas de alquitaras, which are aged using the traditional system of soleras and criaderas. The set of Cardenal Mendoza casks, previously vinified in Oloroso and Pedro Ximénez, is one of the largest systems of soleras and criaderas in Jerez de la Frontera dedicated to the aging of Solera Gran Reserva brandy. With its size, exceptional quality and correct average aging of 15 years are guaranteed. The first Cardinal Mendoza to whom this brandy refers was D. Pedro González de Mendoza (1423-1495), a historical figure in 15th century Spain. As advisor to the Catholic Monarchs, he had the complete confidence of Queen Isabel, intervening decisively in supporting the first voyage of Christopher Columbus and playing a decisive role in the unification of Spain.
TASTING
View: Luminous, transparent, dark mahogany, with yellow-iodine edges.
Nose: With a round, clean, elegant, vinous aroma, with an incredible aromatic intensity of cared for wood and raisined fruits.
Mouth: It is soft, round, well-connected with flavors, with personality and a deep memory of raisins and plums. Its Oloroso nuances make it very attractive and its finish is truly splendid, powerful, long and delicate.
