PREPARATION
The history of Cardenal Mendoza Non Plus Ultra, the oldest brandy of this winery, begins in 1971. Ten years before the Bicentennial, which would take place in 1981, 38 casks of the most exclusive and highest quality brandy were reserved to commemorate the anniversary of Sánchez Romate. After several decades of aging, the inimitable result is this brandy, a true evocation of the more than two centuries of experience of Bodegas Sánchez Romate. Cardenal Mendoza Non Plus Ultra is a Solera Gran Reserva brandy with an average age of 50 years. Its preparation consists of using Cardenal Mendoza Carta Real brandy, 25 years old, to spray the American oak butts of Cardenal Mendoza Non Plus Ultra, which have previously been winened with old Oloroso Sherry wines. This long period of aging makes it possible to add many nuances in a highly sophisticated brandy bottled in an elegant decanter.
TASTING
View: Dark, bright mahogany color with light copper nuances.
Nose: Very complex aromas from the oak of the Oloroso Viejo casks with light notes of dried fruits, walnuts, orange peel and spices, all perfectly harmonized.
Mouth: Dry on the palate, very smooth and well rounded with a deep flavor of constant subtlety. The finish is warm and persistent, inspiring contemplation.
