The Campo Eliseo Cuvée Alegre Toro 2018 Bio is the little and unruly brother of Campo Eliseo. After its good reception in the international market, the owners decided to make a red wine with a lighter and livelier character. A different style, therefore, that requires the same technical rigor of the great wines, just as happens in Bordeaux with the second brands of the most famous houses. It is a fruity, concentrated and round wine, made from the Tinta de Toro variety, a variant of the famous Tempranillo and that offers aromatic and very fine wines, it is also the main variety of the D.O. Bull. A perfect wine to drink with game, roast lamb, beef casserole and even chocolate cake. Awards and recognitions:

PREPARATION

Grapes: 100% Tinta de Toro.

To prepare the Campo Eliseo Cuvée Alegre Toro 2018 Bio red wine a manual harvest was carried out from the traditionally glass-grown vineyard. The grapes were vatted by gravity in small volume tanks of both stainless steel and concrete and underwent a cold pre-fermentation maceration for 5 to 7 days. Subsequently, alcoholic fermentation was carried out with indigenous yeasts, frequent pumping over and gentle tapping throughout the fermentation, for the extraction of the polyphenolic fraction. Once the alcoholic fermentation was completed, it went on to post-fermentation maceration for 7-10 days depending on the tasting and condition of the skins. Malolactic fermentation was carried out with indigenous bacteria, a fraction of the wine in concrete tanks and another in French oak barrels. 2018 was characterized by being a very rainy year, especially in spring, which caused a very strong vegetative development, the plants had a lot of vigor and there was a strong pressure of diseases caused by fungi, which forced organic practices to be carried out to have a good sanitary state.

TASTING

View: Ripe cherry color with a medium-high layer.

 

Nose: Expressive, with hints of ripe red fruits accompanied by light spicy notes of well-integrated wood.

 

Mouth: Of medium intensity, balanced and smooth, with flavors of red fruits, cinnamon and noble wood.

 

Recommended temperature: 16ºC.
