Campo Eliseo Cuvée Alegre Verdejo 2020 75cl.
Campo Eliseo Cuvée Alegre 2020 is a 100% Verdejo white wine, the typical variety of the Rueda region and one of the most famous white varieties. This variety ripens in late September, early October, usually a month later than Sauvignon blanc. At its peak of ripeness, the skins take on a pinkish color and provide fruity aromas of apricot and peach, with long, fatty mouthfeel. This wine is ideal to drink with white meat (veal, poultry,...) and fish, especially when served in sauce, but it also pairs perfectly with paella or salmon pie. Awards and recognitions:

Description
PREPARATION
Grapes: 100% Verdejo.
For the production of Campo Eliseo Cuvée Alegre Verdejo 2020 white wine a mechanical night harvest was carried out independently of each plot. The grapes went through a cold pre-fermentation maceration for 8-12 hours before pressing, to extract the fruit character. Subsequently, cold static settling was carried out, followed by cold stabling for ten days at 5-8ºC. The alcoholic fermentation was carried out in three fractions: small volume stainless steel tanks to achieve aromas of fresh fruit; concrete egg tanks to promote the natural movement of the lees in suspension, providing greater roundness and aromatic complexity; and new French oak demi-muids that provide structure and aromatic richness. Each vineyard fermented separately, some batches with selected yeasts that respect the varietal and others in barrels with indigenous yeasts. No malolactic fermentation was carried out. The aging was carried out on fine lees for 4 months, then the three parts were assembled and their aging continued for two more months.
