Díaz Bayo 8 Monthsis the youngest wine from the Díaz Bayo Winery, which is located in Fuentelcésped (Burgos) in the Ribera del Duero of Burgos, an area with numerous plots full of old vines. The winery has been cultivating these lands for four generations, delivering grapes of exceptional quality. Made with the Tempranillo variety with a short passage through American and French barrels, in which the fruit dominates the notes of its aging. Accompany it with meat stews, cured sausages, fish, sheep cheeses, poultry.

Description
PREPARATION
Grapes: 100% Tempranillo.
To make Díaz Bayo 8 Months wine, a selected harvest is carried out in boxes, with the grapes refrigerated at 5ºC and with a double selection of clusters and berries. The maximum fermentation temperature is 26ºC and malolactic fermentation takes place in barrels and on lees. It is aged for 8 months in French oak barrels.
TASTING
View:
Cherry color with violet highlights. Intense, medium layer.
Nose:
Intense nose, at first there are hints of red and black berries from the forest, aromatic herbs and a toasted finish with soft smoky memories and some spicy touch.
Mouth:
Broad, fleshy, with good structure. The black fruits emerge again accompanied by mineral touches very characteristic of the terroirs of the area. Predominance of fruit over aging notes. Recommended temperature: 16°C
