Protos Verdejo is a dry white wine, made from the Verdejo variety, with an entry into the mouth that surprises by combining freshness and moderate and balanced natural acidity with the roundness, body and structure provided by aging on fine lees. Description
PREPARATION
Grapes: 100% Verdejo.
The vineyards were planted more than 15 years ago. Dry land with gravelly soils. In this area of flat but high lands, the vineyards rise between 700 and 800 meters above sea level, they endure cold winters, short springs and hot, dry summers, conditions that force the grapes to look for food deep underground. It has 177 hectares, where they collect about 7,500 kg of grapes per hectare, thus ensuring the best quality. To make Protos Verdejo wine, a mechanical night harvest is carried out. Maceration with skins for 4/5 hours at 10º C. Controlled fermentation at 13.5ºC. Aged for 3 months on fine lees.
TASTING
View:
Straw yellow with greenish reflections, clean and bright.
Nose:
Powerful, fruity, with notes of green apple, citrus and tropical fruits, white flowers, aromatic herbs and notes of fennel.
Mouth:
Very fresh, with good acidity, intense, fruity, balanced, complex flavor, with a long and slightly bitter finish. Recommended temperature: Serve at 8-10ºC.
