Scala Dei Heretge 2021 75cl.
This red wine, Scala Dei Heretge 2021, is a deep, mature and elegant wine. It has an excellent balance between maturity, freshness and tone. It pays tribute to the winegrowers committed to Priorat, whose viticulture techniques date back to the middle of the last century, heroic, mountain. All their wines bless the monastic origin of the winery and the region, and are based on Garnacha. This wine, on the other hand, is a single varietal Cariñena (minority variety in our vineyards), a true heresy against the winery's historical creed. It could not have any other name than L'Heretge. The heretic who shows us another way to Heaven. It complements very well with game meat and red meat, as well as with different types of stews and stews. Pairs well with blue cheese and Gruyere. Description
PREPARATION
Grapes: 100% Carignan. The production of red wine Scala Dei Heretge is similar to what we do at Cellers Scala Dei with Grenache from historic vineyards. The idea is not to intervene so that what the wine shows is the peculiarity of the terroir that so marks the Priorat slate wines. Thus, fermentation took place in open cement tanks, alternating bazuqueos and pumping over depending on the daily tasting. It fermented with 30% of the stalk, which corresponds to one of the three slopes, where we managed to harvest with a mature stalk. It was in contact with the skins for 22 days from vatting to pressing. Fermentation took place with the grape's own yeasts. The wine was refined in a 4000 liter French oak foudre for 6 months.
TASTING
View: Cherry red color with violet reflections.
Nose:
The nose starts very fruity, ripe black and red fruit, evolving towards mineral and graphite notes of the variety.
Mouth:
In the mouth it is dense and voluminous, very direct and with a very long and fresh finish. Its recommended consumption temperature is 16ºC.
