Anna Blanc de Noirs is our tribute to the last person in the family who bore the surname Codorníu, who in 1659 married the winegrower Miquel Raventós. A vital and expressive cava that consolidates Anna in the front row among the pioneers in the production of new-concept cavas: the Blanc de Noirs. Made exclusively with Pinot Noir red grapes, with aromas of violet and red fruits. Due to its history, its blend and its versatility, Anna has become the most emblematic cava of Codorníu.

Description
Winemaking
Grapes: 100% Pinot Noir.
With Anna de Codorníu Blanc de Noirs the optimal harvest time is planned, the grapes are destemmed and gently pressed. As they are red grapes, the skins remain in contact with the must for a short time, and we only use the first fraction of the must for the base wines of Anna Blanc de Noirs. These base wines show soft pink tones at first, which dissipate throughout fermentation until resulting in a cava with a more intense color than those from white varieties. Once the fermentations are finished and the wines are stabilized, we add the tirage liquor. The bottles go to the underground cellars (at a constant temperature of 15oC) where a second fermentation takes place followed by an aging period in contact with the yeast lees. In total, the wine spends 9 months in the winery, after which stirring takes place (decanting the bottles to facilitate agglutination and subsequent removal of sediment) and disgorging. Subsequently, a quantity of expedition liquor is dosed and finally, we permanently cover the bottle with a cork stopper.
Tasting notes
View:
Bright yellow color with metallic reflections provided by the Pinot Noir variety. Fine and persistent bubble that forms a continuous rosary.
Nose:
On the nose and in the mouth it is harmonious and full of life: very concentrated aromas of black fruits appear, such as cassis and blackberries.
Mouth:
It is a balanced, long cava, with very expressive and pleasant flavors. A different, surprising and appetizing product.
Food pairing
Due to the expressive style and appetizing flavor of this cava, it is advisable to accompany it with casual and lightly seasoned dishes in which the raw material stands out: cold pasta with fruit, steamed or salted fish, cod in salad, rice with vegetables, undercooked meats, cooked ham... It is also a good company for fruit desserts.
