Ederra Selección Especial is a white wine made with Viura, the most recognized white variety of the Rioja Qualified Designation of Origin. A young white wine that completes the Ederra range, a historic brand of Bodegas Bilbaínas since 1902. It harmonizes perfectly with dishes such as fish and seafood, but also soft dishes such as vegetables, creams and cheeses, as well as any type of tapa.

Description
PREPARATION
Grape: 100% Viura. Ederra Selección Especial is made from the white Viura variety. The harvest takes place in the first weeks of September, once the optimal balance between maturity and total acidity has been reached. The harvest is carried out first thing in the morning, seeking freshness and minimizing the time it enters the winery, with the aim of maintaining the fruit and all the aromatic expression. Once received in the winery, and after a slight maceration in the press, a natural static racking is carried out, after which an alcoholic fermentation is carried out at 14ºC, maintaining the freshness and liveliness of the wine. After a first racking, the wine rests in tank for 3 months before being bottled.
TASTING
View: Pale yellow with greenish tones, lively and bright.
Nose:
High aromatic intensity. Memories of citrus peel, fennel and white fruit.
Mouth:
Smooth and friendly entry with a broad and tasty advance. It is recommended to serve cold, between 5º and 8ºC.
