Description
PREPARATION
Grapes: 100% Chardonnay.
To make Enate Chardonnay-234 white wine the grapes, harvested at night, arrive at the winery and are placed in a pneumatic press where they are kept for five hours in skin maceration (what the Anglo-Saxons call “skin-contact”), to obtain the most delicate aromas of the fruit. After static deburbation at 10ºC for 48 hours, the clean must begins to ferment, under the action of selected yeasts of the genus Saccharomyces Cervisiae, Prise de mousse strain, in stainless steel tanks at a controlled temperature (16ºC). After fermentation, the wine is clarified with bentonite and stabilized at -5ºC, to eliminate excess potassium bitartrate. Chardonnay is the white grape that best dominates the Enate winery, a breed that has found in the lands of Somontano one of the best habitats to express itself. And as shown by this exceptional Enate Chardonnay-234 2021.
TASTING
View: Bright straw color with golden tones.
Nose: Complex and intense varietal aroma of green apple, ripe peach, fennel and exotic fruits (guava, passion fruit), on a discreet mineral background.
Mouth: Broad, fatty palate, with a clean and fresh palate thanks to its sustained acidity. Slightly syrupy finish.
Recommended temperature: 8-9º C.
