PREPARATION
Grapes: Atlantic blend of coastal vineyards.
The underwater wine HABLA DEL MAR… is an assembly of different white varieties from vineyards on the Atlantic coast, specially selected by the winemakers of HABLA, based on the experience and know-how of the winery. The Atlantic influence favors the saline character of the wine, which is subsequently reinforced by a second underwater fermentation - the first takes place in the winery. The underwater fermentation system, patented and pioneering in Spain, affects the morphology of the wine and gives it unique organoleptic qualities. The underwater fermentation process is carried out in 400-liter tanks that rest 15 meters deep in the bay of Saint Jean de Luz, a Basque-French town. It is here, at the bottom of an artificial reef, where the wine remains in contact with its lees, at an average temperature of 8ºC, with an atmospheric pressure of three bars and subjected to a constant pounding generated by the movement of the waves and tides. The continuous swaying of the ocean, added to the effect of the pressure on the lees, intensifies the structure and aromas of the wine, with an outstanding romantic and melodic character. This adventure under the sea is carried out in airtight tanks, where there is no possibility of leakage of the carbon generated during the natural fermentation on the seabed. This level of carbon dissolves and becomes part of the extraordinary character of HABLA DEL MAR… At the moment of emergence, the wine is filtered and bottled as quickly as possible so that it does not lose that sparkling point that accentuates its freshness and salinity.

Bright lemon yellow color with slight steely nuances
Nose:
With a subtle fragrance, its seafood aroma stands out to give way to the vegetal character typical of some species of algae. These marine nuances intertwine with the ripe sweetness of quince and the floral delicacy of chamomile.
Mouth:
It reveals all its expression with an effervescence that, although fleeting in the glass, provides a sensation of freshness and dynamism at first contact. The bubble manifests with elegance, offering a sparkling touch that enlivens the palate and sets the stage for the symphony of flavors that follows. The marked acidity is a fundamental pillar of its structure, giving it a freshness that evokes marine minerality and the vigor of the waves.
