Description
PREPARATION
Grapes: 100% Tempranillo The harvest is carried out manually, with careful selection in the vineyard, in 15kg boxes, which are kept cold (4ºC) 24 hours before manual selection. After this selection, only the best grains are cold macerated prior to the beginning of alcoholic fermentation. This takes place for 10 days at 28ºC, after which a maceration is carried out with the skins for at least 2 more weeks. Malolactic fermentation takes place in French oak barrels. Both alcoholic and malolactic fermentation occur spontaneously thanks to the action of the indigenous microbial flora from the vineyards. Malolactic fermentation in Allier French oak barrels, 50% new, where it is aged for at least 1 year. The wine is aged in the bottle for a minimum of 24 months.
TASTING
View: Intense garnet with purple tones.
Nose:
Elegant and intense. Very deep aroma. Black, violet and smoky fruits with a balsamic and mineral background.
Mouth:
Very meaty, powerful and structured wine. Velvety entry and very balanced palate. Great body and persistence. Service temperature: 15ºC.
