Description
PREPARATION
Grapes: 100% Tempranillo Riojano.
Everything is art in Ramón Bilbao Mirto 2016 red wine: from the moment the clusters are chosen on the winery's selection table to the fermentation in small French oak vats. After careful fermentation at a controlled temperature to achieve maximum extraction of aromas and color, the wine goes into barrels where malolactic fermentation takes place without racking, only with the stirring of the lees using the periodic "bâtonnage" technique. It completes a period of 19 months in new French oak barrels from Allier whose toasting level has been specially chosen for this vintage. The wine is bottled without any clarification or filtration process. The 2016 vintage is considered by the winery to be one of the earliest and fastest harvests. It highlighted a cool spring and a very warm summer.
TASTING
View: Deep ruby red color with purple nuances. Clean and bright, with the presence of tears when turning the glass.
Nose: Clean and frank. High and complex aromatic intensity. Aromas of pure Tempranillo from Rioja Alta, licorice, balsamic notes, black fruit and spices (clove, nutmeg and black pepper), smoked notes, chocolate and coffee bean.
Mouth: Intense, juicy and long, with medium acidity and ripe tannins. Integrated alcohol. Balanced, in harmony and of great complexity.
Recommended temperature: 18-19ºC.
