PREPARATION
Grapes: Chardonnay, Xarel·lo
Grown in the village of La Portera (Requena), at 700m altitude, on stony and limestone soils of lake origin. Vineyards distributed in small plots surrounded by Mediterranean forest, with abundance of rosemary, thyme and jedrea. Sustainable agriculture, in glass and strictly dryland, without pesticides or aggressive chemical treatments. In the process of ecological certification. Manual harvest in boxes, with selection of clusters and grains in the winery. Fermentation at low temperature in stainless steel tanks. Aging on its fine lees for 2 months before bottling
