Description
PREPARATION
Grapes: Red Grenache 55%, Cariñena 15%, Cabernet Sauvignon 15% and Syrah 15% After defining the vineyards that will be destined for this wine “Scala Dei Prior”, the grapes previously selected on the estates arrive at the winery in small 16 kg boxes, where all the grapes are thoroughly reviewed by the winery staff as they pass through the vibrating selection table installed at the entrance to the winery. After destemming and crushing, they ferment at a controlled temperature to preserve the aromas of ripe fruit. Subsequently, aging takes place in barrels (80% French oak and 20% American oak) for one year. This aging is completed in the bottle for about 18 months so that the wine reaches the market at its optimal moment of consumption.
TASTING
View: Clean and bright. Intense ruby with a high layer with garnet and bluish tones on the edge.
Nose:
Intense and persistent aromas of red and black fruits, forest strawberries, blackberries, floral nuances of violets, all wrapped up by subtle spicy touches and toasted notes.
Mouth:
It is a wine with body, finesse, silky on the palate and with mature and elegant tannins that are complemented by the mineral aromas provided by the licorella.
