Description
PREPARATION
Grapes: 68% Malbec, 19% Cabernet Savignon and 13% Tannat. Séptima Gran Reserva is harvested in small containers (20 kg boxes) by selecting clusters in the vineyard. In 50% of the musts, pre-fermentation cold maceration is carried out at 5°C for 7-10 days and subsequently fermentation is carried out at 28°C using indigenous yeasts. For the remaining 50%, more than 50 microvinifications are carried out: with whole bunches, variety fermentations, different moments of maturity, in different types of wood, whole grain, selected yeasts, different yields, temperatures, etc. All wines are identified by batch and kept separately in French or American oak barrels and French oak vats. The passage through wood takes 18 months and after the optimal blend is made, it is matured in the bottle for 6-12 months before being launched on the market.
TASTING
View:
Deep and intense red wine.
Nose:
Spicy aromas, nutmeg and pepper. We find menthol aromas accompanied by plum and red fruits.
Mouth:
In the mouth we perceive a wine of great amplitude where we find again the spicy notes from the cabernet and the aging in barrels, the tannins are soft and we find a good balance of acidity. The finish is long, where the complexity that is granted by the 3 varietals used and all the aging details persists.
