Description
PREPARATION
Grapes: Palomino Fino.
The Oloroso Abocado Lustau 1997 wine is made from Palomino grapes partially dried in the sun before pressing (soleo); During the fermentation process, the must was fortified to about seventeen degrees to retain some of its natural sugars. It is subsequently subjected to an aging period of thirteen years in American oak butts, duly sealed and controlled by the Regulatory Council of the Jerez-Xérès-Sherry and Manzanilla Denomination of Origin of Sanlúcar de Barrameda, obtaining a perfect wine. Its production is limited to 14,000 bottles.
