Anna de Codorníu Brut Nature is a very feminine, pure and lively cava, it was the first cava to incorporate the Chardonnay grape in its blend, which gives it delicate aromas and a very peculiar freshness. It is, without a doubt, the most symbolic cava of this winery. It was created in homage to the last person in the family who bore the Codorníu surname, Anna, who in 1659 married the winegrower Miquel Raventós.

Description
Winemaking
Grapes: Chardonnay, Parellada, Macabeo and Xarel·lo.
The optimal harvest time is planned for each variety used in Anna de Codorníu Brut Nature. After destemming and pressing the grapes, the musts are obtained. The yeasts are added and the musts ferment at a temperature of 15-17ºC. Once the fermentation has been carried out and the wines have been stabilized, the assembly is carried out and the resulting wine is bottled together with the tirage liquor. The bottles go to the underground cellars at a constant temperature of 17ºC, where the second fermentation takes place followed by an aging period in contact with the yeast lees. In total, the wine spends a minimum of 12 months in the winery, after which the stirring and disgorging takes place. Subsequently, a quantity of expedition liquor is dosed that will determine the residual sugar content of this cava. Finally, the bottle is permanently covered with a cork stopper. This is the traditional method, also used in the production of champagne.
Tasting notes
View: A bright yellow color with greenish reflections can be seen. With fine and persistent bubbles that form a continuous rosary.
Nose: Refreshing citrus fruits are appreciated accompanied by notes of honey, walnuts, almond blossom and apples. The creaminess of Chardonnay, together with the aging time, make it possible to make this Brut Nature, without added sugar.
Path: It is a balanced cava, long and with delicate flavors.
Food pairing
Brut Nature cavas, due to their low sugar content, are slightly bitter, which makes them a good ally for appetizers (nuts, olives, foie-gras canapés, caviar or substitutes...), wok vegetables, seafood and grilled meats.
