Description
PREPARATION
Grapes: Pinot Noir.
To make Tantum Ergo Rosé cava the best grapes from low-production strains from the Pinot Noir vineyards are selected. It is selected box by box and proceeds to destemming and crushing. All the resulting grape paste is placed in a stainless steel tank with a cooling system to subject the grapes to cold maceration for a maximum of 2 hours. The must extracted from the press is statically decanted for 24 hours and then only the clean part of the must is taken to ferment in new American oak barrels. Once the fermentation is finished, it is kept on the lees until its final filtration. The second fermentation is done in the bottle at a constant temperature of 16ºC to achieve a very slow fermentation that will give the perfect integration of the endogenous carbon dioxide reflected in a very fine bubble in the glass. Aging on lees is a minimum of 22 months and disgorging is manual.
TASTING
View: Pale rose gold color.
Nose: Powerful aroma, of high intensity, recalling aromas of red fruits mixed with dried fruits and a light touch of toasted vanilla and pastries.
Mouth: Broad flavor, with a creamy touch, reminiscent of the skin of a ripe cherry with a light aroma of vanilla and spices. Balanced acidity and very long finish.
Recommended temperature: 8º C.
