PREPARATION
Grapes: Chardonnay and Pinot Noir.
A gray and cloudy sky dominates the 2008 wine year, a singular event in a solar and insolently generous decade. Finally, at the very moment of beginning the harvest, the perfect conditions were presented: a radiant sun and sustained winds from the north to the northeast. Maturity is revealed beyond expectations, in an unprecedented and elevated balance. The state of health is impeccable. Dom Pérignon adds depth, density and complexity to the bracing acidity, concision and aromatic purity expected from the 2008 vintage. The light is warmer and less harsh. Dom Pérignon declared Champagne Dom Pérignon Vintage 2008 as a miracle Champagne.
TASTING
View: Light golden yellow color with fine, abundant bubbles.
Nose: The explosion of the bouquet is complex and bright, a mix of white flowers, citrus and stone fruits. All of this stimulated by the freshness of anise and mint. As we breathe, we finally perceive the spicy, woody and roasted touches.
Mouth: The wine, until now introverted, finally reveals itself. The coherence between nose and mouth is total. Its sharp, elongated, refined, tonic and athletic profile imposes itself with warmth. The fruit makes its statement loudly and clearly. The acidity that characterizes this vintage is surprisingly integrated. The persistence is essentially aromatic, gray, smoky, compelling.
Recommended temperature: 8-10ºC.
