Grand Plus Ultra Chardonnay Brut Nature was the first cava in Spain made with the Chardonnay variety, this cava is a tribute to that pioneering spirit. It is the faithful reflection of a grape and a terroir. The best expression of the Chardonnay grape from our oldest vineyards. It is an ideal cava to enjoy throughout a meal since its complexity improves the most versatile dishes: risotto, seafood platter, sea and mountain dishes, duck magret, stews, smoked dishes and strong seasonings.

PREPARATION
Grapes: Chardonnay. In Cava Grand Plus Ultra Chardonnay the optimal harvest time for this variety is planned. After destemming and pressing the grapes, we obtain the musts that ferment at a temperature of 15°-17°C for 12-15 days. A part of the Chardonnay must ferments in contact with oak, achieving new nuances, greater structure and complexity. Once the fermentations are finished, they are blended, and the resulting wine is bottled together with the tirage liquor. The bottles undergo the second fermentation followed by an aging period in contact with the yeast lees in our underground cellars at a constant temperature (15°-17°C). This is the so-called traditional method. It is a Reserva cava that spends a minimum of 15 months in the cellar.
TASTING
- View: Pale yellow color with golden reflections, clean and bright. Fine bubbles that form continuous rosaries and a persistent crown over time, which indicates good fermentation in the bottle.
- Nose: On the nose, soft toasted notes appear, interspersed with spring fruits: peaches and cherries, on a background of brioche and nuts from aging on lees. Very complex, with elegant notes and an aromatic breadth that improves with time in the glass.
- Path: The palate is broad, complex, balanced and creamy. The smoothness of the Chardonnay grape allows this cava to be produced as Brut Nature, without the addition of sugars in the expedition liqueur.
