Description
PREPARATION
Grapes: 100% Airén
Coming from dryland vineyards located at an altitude between 750 and 800 meters, at the apex of the La Mancha plain in transit with Campo de Montiel. An area with an extreme climate in which the Airén variety has settled for centuries, resulting in wines with a unique personality with a marked mineral character, good acidity and surprising freshness. After the harvest and manual selection, a cryomaceration of hours is carried out and then fermented at a low temperature between 15 and 18 degrees. A percentage of this batch ferments as carbonic maceration, squeezing the maximum potential of the fruit. Afterwards, the wine is aged for 5 months in century-old clay jars, thus achieving a natural clarification of the wine. It is then aged for 7 months in used 500 liter French oak barrels.
TASTING
View:
Pale yellow in color with green reflections, on the nose you can see fruity aromas of medium intensity with certain notes of ripe fruit.
Nose:
After its initial evolution, aromas of bananas and citrus fruits appear, especially grapefruit, but maintaining its initial freshness.
Mouth:
In the mouth it is sweet and fresh, with a frank and pleasant sensation, with good structure and aromatic complexity in the mouth. Its evolution is admirable with a broad and harmonious final sensation. Recommended temperature: Serve at 8ºC.
