Description

PREPARATION

Grapes: 100% Tinto Fino The Páramos de Legaris 2018 grapes are quickly transferred to the winery to maintain their qualities. After destemming, the grapes arrive practically whole in the stainless steel tanks, processing the different origins of the grapes separately. We carry out a cold pre-fermentation maceration (10oC) for 3-4 days in order to extract aromas and color and subsequently allow the temperature to increase progressively. The wines start alcoholic fermentation naturally and to express the typicality of our different terroirs they carry out it with their own native yeasts. Fermentation temperatures range between 26 and 28oC. Vatting is carried out on average between 12-14 days from vatting. In order to respect the fruity character of Premos de Legaris, the average aging in barrels has been 11 months in Bordeaux barrels selected from fine-grained French oak and American oak, in new barrels, for one and two wines. This wine has not been stabilized by cold, so due to its natural production it could present sediments.
