PREPARATION
Teacher's whiskey stands out for its high proportion of fully peated single malt. The degree of smokiness of single malt whiskey depends on how long the malt has been dried over the peat fire. The malt is ground in grist. Local highland spring water is drawn from Knockandy Hill and mixed with the grist. With heat, the sugars are extracted from the mash, creating a sugary solution called wort, which is cooled and then infused with yeast to ferment and double-distilled in traditional copper pot stills, retaining the heart from the second distillation to mature into single malt whiskey. By law, the spirit cannot be called Scotch whiskey until it has been matured in Scotland for at least 3 years. Typically, much of the spirit will mature for much longer, however, it is the time spent in the barrel that allows the spirit to develop its flavor and acquire its famous golden color. It is the composition of The Ardmore single malt blended with a number of different malt and grain whiskeys that creates Teacher's Highland Cream whiskey.
TASTING
View: Amber color with golden reflections.
Nose: A deep and robust malt shows through from the start which is accompanied by a smooth Highland peat smoke flavour. This full aroma slowly fades to allow the sweeter, fruitier aromas of apples, pears and honey ripeness to come through.
Mouth: Challenging and exciting flavor that at the same time warms you up. This magnificent flavor is full of rich malts and maturity that slowly fades to a silky, rounded texture. This whiskey is a delight, full of depth and substance. It finishes well balanced with a clean, busy fullness of flavor that ends with a slow fade of flavors.
