Description
PREPARATION
Grapes: 100% Bobal. Casa Lo Alto Manzán comes from three plots planted between 1940 and 1965. The vines are grown in a vase formation, a structure that saves water and protects against excessive sunlight. In soil management, the revitalization of the soil is sought with organic amendments, and the use of chemical synthesis products is avoided, in order to have a living soil that expresses the characteristics of the terroir. This year the weather was cool and rainy, slowing down the ripening of the grapes. The grapes were harvested at the end of September and different percentages of whole bunches were used, the rest of the grapes were vatted, destemmed without crushing. Fermentation begins spontaneously with native yeasts. After pressing it is transferred to concrete tanks and foudres where malolactic fermentation ends, the wine ages for 10 months on its lees. Bottled without clarification and filtered for 5 microns.
TASTING
View: Dark red color.
Nose: Aromas of fresh red fruit tinged with herbal touches.
Mouth: It is agile in the mouth, reaffirming the presence of fresh fruit and a pleasant acidity.
