Description
PREPARATION
Grapes: Chardonnay and Pinot Noir (Blanc de Noir).
The grapes used to make Tantum Ergo cava are selected and harvested in the morning. The varieties are vinified separately and at the end of fermentation the blend is made. The Chardonnay undergoes cold maceration for 24 hours. The Pinot Noir is vatted very cold directly on the pneumatic press, lightly pressing to obtain the white must. Fermentation takes place in new American oak barrels. Once the fermentation is finished, the final blend is made, which is kept on the lees until its final filtration. The second fermentation is done in the bottle at 16º C to achieve a very slow fermentation that will give the perfect integration of the endogenous carbon dioxide reflected in a very fine bubble in the glass. Aging on lees is a minimum of 22 months and disgorging is manual.
TASTING
View: Yellow color with green reflections.
Nose: Very high intensity, recalling aromas of ripe white fruit, with nuances of pastries and dried fruits with a light background of vanilla.
Mouth: Powerful, creamy, with a lot of breadth and complexity in the mouth that gives it a very long finish and balanced acidity.
Recommended temperature: 8º C.
