Winemaking

Grapes: Bobal, Cabernet, Merlot and Shiraz.

For the production of Quod Superius red wine the best grapes from low-production strains are selected. The grapes are harvested only in the morning to maintain a good temperature in the grapes until they arrive at the winery, where they are placed in a cold room, keeping the grapes at -10ºC. It is destemmed and vatted in new American oak barrels, in which a water-cooled stainless steel plate is inserted into each barrel to be able to cold macerate at 8ºC. The hat is sunk daily, barrel by barrel, manually and once fermentation has started, the cooling water is turned off so that the barrel itself can reach a maximum temperature of 26ºC during fermentation. The production of the different grape varieties is carried out separately and they spend a minimum of 20 months in American oak and fine-grain French oak barrels. After 20 months, all the barrels are tasted and the best of each varietal are selected to make a blend that is placed again in new French oak barrels, where it spends at least 10 more months.

Tasting notes

View: Intense red color with a high layer.

Nose: Powerful and elegant aroma, presenting great diversity of nuances with a background of ripe red fruit on a very well integrated wood that gives complexity and distinction to the wine.

Mouth: Majestic, velvety and silky to the touch, it slides through the mouth with density, noticing the ripe tannin well polymerized with the oak. Very long and harmonious finish.

Recommended temperature: 18ºC.

Food pairing

Quod Superius 2017 is a red wine with D.O. Utiel-Requenawhich pairs perfectly with long-cured beef. Dare to try it with high-purity cocoa chocolate. It won't leave you indifferent!
