PREPARATION

Grapes: Chardonnay and Pinot Noir (Blanc de Noir).

To make Tantum Ergo Exclusive cava the best grapes from low-production strains are selected. The must extracted from the press is statically decanted for 24 hours and then only the clean part of the must is taken to ferment in the new American oak barrels at a temperature of 16º C. Once the fermentation is complete, the final blend of Chardonnay and Pinot Noir is made and kept on the lees until its final filtration. The second fermentation is done in the bottle at a constant temperature of 16° C to achieve a very slow fermentation that will give us the perfect integration of the endogenous carbon dioxide reflected in a very fine bubble in the glass. Aging on lees is a minimum of 120 months and disgorging is manual.

TASTING

View: Bright golden yellow color.

 

Nose: Aroma of very high intensity, very expressive, dried fruits, spices and hints of sweet fruit.

 

Mouth: Very creamy and persistent flavor, subtle and elegant, with a majestic palate and balanced acidity with a very long aftertaste.

 

Recommended temperature: 8º C.
