Description
PREPARATION
Grapes: 100% Tempranillo. Viña Zaco Singular 2015 has a manual harvest in 15kg boxes. Cold maceration 12-18 hours prior to selection. Destemmed very delicately so as not to break grains, a selection of the grain is made prior to vatting, eliminating all plant parts and damaged grains. Fermentation takes place in open concrete lakes, using daily manual tapping to improve extraction. The total maceration in 2017 was 21 days, being discovered at the moment of maximum balance and expression. Malolactic fermentation was carried out in second-year, medium-toasted French oak barrels. Subsequently, it is aged in 1,200 liter French oak foudres for 20 months.
TASTING
View: Deep, intense, cherry red with violet reflections; very alive.
Nose:
Spicy notes of licorice and black fruits. Floral nuances of violets and jasmine with touches of balsamic and smoky notes.
Mouth:
Smooth entry, broad, generous, well-structured in the mouth, with round tannins for a magnificently balanced wine. Long and mineral aftertaste.
